I found pictures of this raw chocolate cake/brownie that I made a while ago and wanted to share. Even though this isn’t a traditional cake, I love it so much more because there is only real, raw foods in it. There are a lot of dates, and dates are high in sugar, so it’s still a once in a while treat…but it’s way healthier than buying something processed from the store.
My criteria in order of importance:
- Healthy
- Taste
- Ease
This only takes the time to blend everything and you have a delicious chocolate brownie type cake. It’s rich, so adding some fruit, cashew cream, or ice cream would be perfect.
Ingredients:
- 3 cups walnuts
- 2/3 cup raw cacao or cocoa powder
- 1/4 tsp salt
- 2 cups dates (about 20 of the deglet noor, less of medjool)
- 1 tsp vanilla extract
Grind the walnuts and salt. Then add the dates, cocoa and vanilla. I used my blender, then I mixed everything together with a wooden spoon afterwards.
After it’s all mixed you just shape it like a cake and you’re all done. I added sliced strawberries on top.
The taste and consistency reminded me a lot like those packaged brownies with nuts on top, chewy and moist.
I’m always nervous about making raw food alternatives, but this was surprisingly awesome.
