I’m very proud of the fact that the groceries in our house are about 90% vegan, organic, non-junk food, etc. I do oblige my dude and buy him lunch meat and cheese that he takes for lunch every day. Processed lunch meat grosses me out because I cannot find one that doesn’t have caramel coloring, artificial flavors, or weird chemicals. I asked if he’d be open to taking things other than a ham and cheese sandwich if I made them every day, and he agreed.
My main criteria is that it’s simple and doesn’t have to be heated. It also has to fit in with what I normally buy for groceries, I don’t want to have an added expense.
Monday:
- Veggie Pita (lettuce, tomatoes, onions, cucumbers, and red peppers, with grapeseed oil mayo)
- Cucumber and Tomato Salad with Lite Balsamic Dressing
- Blueberry Muffins (leftover from Sunday morning)
