Pumpkin Spice Pancakes

  • 1 cup Biquick
  • 1 (flax) egg*
  • 1/2 cup (almond) milk
  • 1/4 cup pumpkin puree (next time I’d use more)
  • 1/3 cup apple sauce
  • 1 teaspoon vanilla
  • 1 teaspoon pumpkin pie spice (or a dash of cinnamon, nutmeg, and ginger)
  • 1 scoop (raw warrior plain) protein powder

Mix all ingredients together. Add a little more pumpkin or apple sauce if it’s not moist enough. Scoop scant 1/4 cup of batter onto hot greased griddle. Cook for a few minutes on each side until golden brown.

(*To make 1 flax egg, mix 1 tablespoon ground flax seed meal and 3 tablespoons water, then refrigerate for a few minutes while preparing the rest of the recipe. You could also use another egg replacer.)

I thought these were perfect without any agave, but a real maple syrup (not that Aunt Jemima crap) would probably add a nice flavor to it.
